When frozen and blended, bananas take on the creamy consistency of ice cream. This “ice cream” is especially good eaten post-workout, but you can enjoy it any time and still feel good about your choices; once you try it, you’ll never miss the carton-variety!
Banana Walnut “Ice Cream” (Serves 2)
- ¼ cup chopped walnuts
- 2 frozen bananas
- ½ tablespoon honey
- 2 tablespoons almond milk
- Pinch of sea salt
- (Optional) Toast walnuts: Heat a small pan over medium. Add the walnuts to the dry pan and toast, just until fragrant, shaking the pan once or twice to brown evenly. Keep an eye on them, as they will burn quickly!
- Add the walnuts and remaining ingredients to a blender and pulse until smooth (Depending on the strength of your blender, you may have to mix the contents around a bit after pulsing, so that the blade doesn’t get stuck.).
- Serve as-is for a creamy treat, or place the mixture back in the freezer to harden.
